Sometimes our feet need a little help.  They take a pounding daily.  Achy tired sore feet?  Dry feet?  Rough Skin?  Well here’s a solution to that.  I can attest to the effectiveness of this because I use it all the time.  It will relieve your sore, achy tired feet and get rid of all the dead skin on your feet.  The longer you soak your feet the better they feel and the easier the dry dead skin comes off!!

Glazed Strawberry Muffins

1 1/4 cups all purpose flour
3/4 cup whole wheat flour
1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon fine salt
1 teaspoon ground cinnamon
2 large eggs
1 cup Silk® Unsweetened Vanilla Almondmilk
1/4 cup non-fat plain Greek yogurt
1 teaspoon pure vanilla extract
1 1/2 cups fresh strawberries, hulled and finely chopped

Strawberry Glaze

3/4 cup confectioner’s sugar
1 teaspoon strawberry preserves
1 teaspoon Silk® Unsweetened Vanilla Almondmilk

Preheat your oven to 375 degrees. Grease a 12 cup muffin tin or line with paper liners.

In a medium bowl, whisk together the flours, sugar, baking powder, salt and cinnamon. Set aside.

In a small bowl, whisk to beat the eggs lightly. Add the almond milk, yogurt and vanilla. Whisk to combine.

Pour the milk mixture into the dry ingredients and stir just until combined. Add the strawberries and fold in gently.

Divide the batter between the 12 cups. Bake in the oven for 16 to 18 minutes or until a toothpick inserted in the center comes out clean.

Cool the muffins in their tins for about 5 minutes. Remove and cool completely on a wire rack before glazing.

Prepare the glaze by combining the ingredients in a small bowl. I like to dip the tops into the bowl of glaze, then allow them to dry on the rack. (Who am I kidding? I usually eat one as soon as it leaves the bowl!)

Banana Bread Doughnuts with Banana Glaze

Ingredients (6 – 8 Doughnuts)
  • Doughnuts:
  • 1 Cup all purpose flour
  • 1/4 Cup sugar
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon cinnamon
  • 3/4 Ripe banana, mashed
  • 2 Tablespoons unsalted butter, melted
  • 1 Egg
  • 1/2 Cup buttermilk (regular milk OK here)
  • 1 Teaspoon vanilla
  • Glaze:
  • 1 Tablespoon unsalted butter, melted
  • 1 Tablespoon milk
  • 1/4 Ripe banana, mashed
  • 3/4 Cup powdered sugar
  • Pinch of salt
  • Dash of cinnamon
Instructions
Pre-heat the oven to 350 degrees.
In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. In a separate bowl, whisk together the egg, melted butter, buttermilk, vanilla and mashed banana. Mix the wet ingredients into the dry.
Spray a doughnut pan with a light coating of non-stick baking spray and pour the batter into each cavity. If you have an 8-doughnut pan, fill each cavity about 3/4 of the way up. If you have a 6-doughnut pan, like I do, just fill to the top. It will still be fine. Bake for 13 – 15 minutes until set but barely golden brown. Allow to cool slightly before turning out of the pan.
While the doughnuts are cooling, whisk together the melted butter, milk, banana, powdered sugar, salt and cinnamon. Turn the doughnuts out onto a rack and generously pour on the glaze.
